DescriptionThe aim of this paper is to specify the arising preferences within a theory of demand for seafood products through a socio-economic quantitative analysis. The relevance of standard economic variables is discussed by introducing additional socio-demographical variables in a multivariate statistical analysis. The position of seafood among other food products within consumers' utility functions, given the life-styles hypothesis, emphasizes the relative weight of regional food patterns and age-structured effects on seafood consumption m France.
